Preheat the oven to 160 degrees. Grease a cookie sheet with butter spray.
In the mixer, add the butter and sugar until combined. Add the egg, vanilla, lemon zest, and salt. Mix until the mixture turns a pale color. Add the baking powder and oats.
Use a spoon to place the mixture on the sheet, spacing them 7 centimeters apart and pressing them down with the same spoon to create a round shape.
Bake for 9 minutes and transfer them to a rack to cool.
