Shortbread with Orange Zest

400 grams vegetable shortening, cut into cubes
100 grams lard
50 grams sugar
4 eggs
1 kilo wheat flour, sifted
3 grams salt
1 orange, only the zest
granulated sugar, for dusting
Preparation

Low
Cream the fats in the mixer, add the sugar, and beat until you obtain a smooth and fluffy mixture.
Add the eggs one by one without stopping beating.
Gradually add the flour, salt, baking powder, and orange zest without stopping to beat.
Cover the dough with cling film and refrigerate for 20 minutes.
Preheat the oven to 180°C.
Lightly flour the work surface and roll out the dough. Cut the cookies and place them on baking sheets.
Bake the shortbreads for approximately 12 minutes or until they are lightly golden. Let cool and dust with sugar.
