Almond Alegrías with Chocolate

  • 1 cup amaranth
  • 2 cups semisweet chocolate, sugar-free, chopped

  • Preheat the oven to 180 °C.
  • Place the almonds on a tray, spreading them evenly across the surface, and bake for 10 minutes until toasted. Remember that you can open the oven from time to time to move the almonds for a more uniform golden color.
  • Once the almonds come out of the oven, chop them into small pieces, place them in a bowl, and mix with the amaranth. Set aside.
  • Melt the chocolate using a double boiler, meaning place the chocolate in a bowl that fits perfectly over a pot of hot water. Remember to turn off the heat once the steam from the water is intense, as otherwise, the chocolate may burn. Once melted, remove from heat.
  • Pour the melted chocolate over the almond mixture and mix well. Once ready, grease a pastry ring 5 to 8 centimeters in diameter, then place it on a tray lined with greased paper and fill with the almond mixture until half full, although this will depend on the thickness you want for your alegrías.Remove the ring and repeat until the mixture is finished, but remember to handle the mixture quickly, as the chocolate can solidify rapidly. Decorate with more almonds on top and let the chocolate dry. Once ready, enjoy the almond alegrías with chocolate at any time of the day.
