Coconut Balls or Coconut Sultanas

Delicious cookies made with dehydrated coconut, perfect to serve as a tasty dessert or a delightful snack. The coconut balls recipe is a preparation you can do with your children. The coconut sultanas are spectacular.

  • 125 grams coconuts, grated and dehydrated
  • 125 grams sugar
  • 2 egg whites
  • 1 egg yolk
  • 2 grams baking powder
  • 1 pinch salt

  • Beat the egg whites with a pinch of salt until stiff peaks form, once the egg whites are whipped, gradually add the sugar.
  • Once the meringue has a firm consistency, add the egg yolk and mix completely, then add the baking powder and finally the grated coconut.
  • At the beginning of incorporating the coconut, the mixture will have a slightly liquid consistency, but that's okay; this happens because the coconut has not been hydrated. If you continue beating, you'll see that the mixture will obtain a sticky but manageable consistency, suitable for forming balls.
  • Form small balls (of your preferred size) and place them on a silicone mat or parchment paper, then bake in the oven at 180 degrees for about 10 to 15 minutes.
