Dulce de Leche Filled Alfajores

160 grams unsalted butter
3/4 cups sugar
1 egg
1/4 cups water
3 tablespoons dulce de leche
2 3/4 cups wheat flour
1 1/2 tablespoons cornstarch
1 tablespoon baking powder
1 can dulce de leche
1 1/2 sticks bittersweet chocolate, melted for filling

Preheat oven to 180 °C.
For the dough, beat butter with sugar until fluffy.
Add egg, water, and tablespoons of dulce de leche.
Add flour, cornstarch, and baking powder (previously sifted) and beat until fully integrated.
Cover the dough with plastic wrap and refrigerate for 15 minutes.
On a floured surface, roll out with a rolling pin and cut 48 circles.
Place on baking sheets and bake for 10 min. and let cool.
Take one cookie and spread a teaspoon of dulce de leche.
Cover with another cookie and press lightly to adhere.
Repeat the process with all the cookies.
Melt chocolate in the microwave, in 15-second intervals to avoid burning.
Cover the cookies with chocolate.
Refrigerate for 15 min.
