In a bowl, beat the egg whites until stiff peaks form and add 3/4 cup of sugar, continue beating until they are perfectly integrated.
In another bowl, beat the yolks, the remaining sugar, the milk, and the flavoring.
Sift the flour and baking powder over the egg yolk mixture.
Beat until a homogeneous and slightly thick batter forms.
Gradually add the beaten egg whites and mix using a spoon with folding motions until everything is incorporated; it is important to do it this way and not with a mixer, as the mixture needs to be aerated as much as possible.
Place parchment paper at the bottom of the mold to prevent the batter from sticking, and grease the mold and paper.
Place in the preheated oven and bake for 60 to 75 minutes, depending on the oven. The cake should rise slowly.
Remove and cover to allow it to lose heat gradually.
Once cooled, unmold and serve; you can also fill and cover it.
