Jericallas Jalisco Style

These jericallas are a delicious traditional dessert from the state of Jalisco, Mexico. This dessert is a very traditional preparation in Mexican cuisine, similar to flan, but with a custard topping. It’s a delightful dessert that the whole family will love.

  • Preheat the oven to 180° C.
  • In a heavy-bottomed saucepan, combine the milk, sugar, and cinnamon stick over medium heat, stirring with a wooden spoon. When it begins to boil, remove from heat after 10 minutes.
  • In a bowl, beat the eggs until they reach a turrón consistency, then temper with the previous mixture, adding little by little.
  • Continue beating and add the vanilla essence at that moment.
  • In silicone containers or deep porcelain dishes, pour in the mixture, making sure to remove the cinnamon stick, and place in a water bath in the oven. Bake for 45 minutes.
