Puff Pastry Cones filled with Pastry Cream

  • 300 grams flour
  • 10 grams salt
  • 300 milliliters water
  • 500 grams unsalted butter
  • 200 grams flour
  • pastry creams, to taste
  • powdered sugar, to taste for sprinkling

  • Puff Pastry: Make a crown with flour (300 g) and salt. Add water and knead until a smooth texture is achieved.
  • Butter Mixture: Work the butter with the flour (200 g) without softening it too much. Chill in the refrigerator. Roll out the dough into a rectangular shape, place the butter mixture in the center, and enclose it with the dough. Give 2 single turns and 2 double turns, resting in the refrigerator for 30 minutes after each one.
  • Assembly: Roll out the puff pastry to a thickness of 3 mm. Cut strips of 2 by 30 cm. Wrap the tubular molds with the strips of dough while rotating the molds as you work. Ensure that the layers of dough do not have gaps so that the filling does not escape through the spaces. Place on trays. Chill for 30 minutes before baking. Bake at 210º C for 20 minutes. If desired, sprinkle with powdered sugar 10 minutes before cooking is finished to caramelize the surface. Let cool.
  • Fill with pastry cream.
