  • 2 cups carrot, grated
  • 1/2 cups walnuts, chopped
  • 1 cup milk
  • 1 teaspoon cinnamon powder

  • 1/2 teaspoons ground cloves
  • 1 teaspoon vanilla essence
  • 1 pinch salt
  • 250 grams butter, for the frosting, softened
  • 300 grams cream cheese, for the frosting, at room temperature
  • 1 cup sugar, for the frosting
  • 3 limes, juice, for the frosting
  • 1 orange, zest, for the frosting
  • 1 teaspoon vanilla essence, for the frosting

  • In a mixer, add the pancake mix, baking powder, eggs, grated carrot, chopped walnut, milk, ground cinnamon, nutmeg, ground cloves, vanilla extract, and salt; beat until you have a smooth consistency.
  • In another mixing bowl, add the softened butter, cream cheese, lemon juice, orange zest, vanilla extract, and sugar until you form a smooth frosting and refrigerate until it is thicker and cold.
  • In a non-stick skillet, make 3 pancakes; cook on both sides and let cool.
  • For assembly, place one pancake on a platter and spread the cream cheese frosting; then place another pancake, and so on consecutively until you have the desired number of cake layers. Depending on the height you are looking for, that will determine the number of layers to use.
  • Cover with the cream cheese frosting and decorate with the chopped walnut and almond.
