This recipe was shared with me by an Italian chef who, despite not being the traditional tiramisu recipe, is for me ¡fantastic! Since it doesn't have too much mascarpone flavor, it just gives that little touch which makes it delicious.
Make sure both cheeses are at room temperature, like a soft cream.
In your mixing bowl, put 100 grams of sugar and 6 egg yolks and beat until well incorporated.
(At low speed, that is 1 whether using a professional or home mixer)
Gradually add the whipping cream, and increase to medium speed. When it is semi-whipped, increase the speed a little more and add the cheeses LITTLE BY LITTLE! NOTE: do not add them all at once; it must be done gradually to avoid lumps. Once incorporated, you can stop and you have your mixture.
Now in a deep plate, put a cup of lukewarm water, not hot, at room temperature please, otherwise our ladyfingers will become too soft. Well, in that cup of water, add the two packets of instant coffee, and in this mixture, we will just slightly moisten our ladyfingers!
In a baking dish or wherever you wish to do it, we will put a layer of previously moistened ladyfingers, then a layer of our mixture, and then another layer of ladyfingers, and so on.
Refrigerate for about two hours; if you can leave it overnight, even better, much tastier.
Once served, sprinkle with a little cocoa powder and ready!
You will have a delicious tiramisu!
