Mexican Flag Cookies

Nothing more colorful and packed with flavor to celebrate Mexico’s national holiday than these delish Mexican flag cookies! The yummy combination of vanilla essence, egg, flour, icing sugar, and butter make this the ideal dessert to celebrate Mexico’s Independence. Let the red and green food coloring bring these cookies to life!

  • 1 stick butter, 3.1 oz
  • 1/2 cups vegetable shortening
  • 1 cup icing sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1/2 teaspoons salt
  • 2 cups flour
  • green food coloring
  • red food coloring
  • 15 chocolate chips

  • Preheat oven to 356 ºF.
  • Using a mixer, cream butter, vegetable shortening, and icing sugar.
  • Add egg and vanilla essence and mix until completely incorporated.
  • Add salt and flour little by little. Mix until a homogeneous cookie dough is formed.
  • Divide cookie dough into 3 bowls. For the green cookie dough, add green food coloring to the first bowl. For the red cookie dough, add red food coloring to the second bowl.
  • Roll green, red, and white cookie doughs into logs. Arrange cookie logs to simulate the Mexican flag and brush with egg yolk to stick them together. Wrap cookie logs in plastic wrap. Freeze for 10 minutes.
  • Unwrap cookie logs and cut into slices. Arrange flag cookie dough in a previously greased and floured baking sheet. Place a chocolate chip in the middle of the white cookie dough to simulate the Mexican coat of arms.
  • Bake for 10 to 15 minutes or until the edges are slightly golden brown. Let cool and serve Mexican flag cookies.
