Cheese Flan in Bain-Marie

  • 1 cup Reserve Cheese 12 García Baquero®
  • 1 cup evaporated milk
  • 1 cup condensed milk
  • 1/2 cups table cream
  • 6 eggs
  • 1 teaspoon almond essence
  • 1 cup sugar
  • water
  • 1 cup Reserve Cheese 12 García Baquero®, grated
  • almonds, sliced and toasted

  • Grate the García Baquero® Reserva 12 Cheese.
  • Blend the grated García Baquero® Reserva 12 Cheese with evaporated milk, condensed milk, cream, egg, and almond essence for 5 minutes until you have a homogeneous mixture. Set aside.
  • Heat the sugar in a small pot and let it caramelize over low heat without stirring for 8 minutes. When the caramel reaches a light golden color, remove from heat and pour it into a round cake mold. Let it cool.
  • Pour the flan mixture into the mold with the caramel, cover with aluminum foil, place in a pot with a rack for bain-marie, and cook over medium heat for 40 minutes. Remove from the bain-marie and let the cheese flan cool for 1 hour before unmolding.
  • For the cheese crust: melt and brown the García Baquero® Reserva 12 Cheese in a pan over medium heat for 10 minutes, flip and brown the other side. Remove and place on a plate with absorbent paper. Let it harden, as it will be the decoration for the flan.
  • Place the cheese flan in bain-marie on a wide plate, decorate with the cheese crust and sliced almonds.
