Dark Chocolate and Coffee Flan

  • 300 milliliters cow's milk
  • 64 grams sugar
  • 2 eggs
  • 100 grams bittersweet chocolate
  • 1 envelope instant coffee
  • sugar, to caramelize the flan molds

  • Heat the milk with the sugar and coffee until dissolved, incorporate the beaten eggs off the heat while mixing quickly, being careful not to curdle.
  • Strain it and pour it over the chopped chocolate, mix it well and blend it with an immersion blender to ensure a smooth mixture. Pour into the previously caramelized flan molds.
  • Bake at 100ºC in a water bath until set. Check the center with a toothpick; it should come out clean. Cool, unmold, and enjoy!
