  • 1/2 cups sugar
  • 6 egg yolks
  • 1 1/2 cups Lotus Cream
  • 2 tablespoons cornstarch
  • 1 liter milk
  • 1 cinnamon stick
  • Lotus Cream , for decoration
  • Lotus Cookies, for decoration

  • Heat the sugar in a semi-deep saucepan over medium heat for 10 minutes or until you get a caramel. Pour it over a stainless steel mold, spread it out, and set aside.
  • Use a whisk to mix the egg yolks, Lotus cream, and cornstarch. Set aside.
  • Heat the milk with the cinnamon stick, pour a ladle of milk over the previous mixture, mix to temper, and pour the mixture in while stirring. Cook over medium heat for 10 minutes and set aside.
  • Pour the previous mixture into the mold with the caramel, cover with aluminum foil, and cook in a water bath for 60 minutes. Cool and unmold.
