Flourless Chocolate Cake

With less than 5 ingredients, you can prepare this exquisite flourless chocolate cake. It's ideal for celiacs or for enjoying a low-carb chocolate cake.

  • 1/2 kilos bittersweet chocolate, chopped into small pieces
  • 115 grams butter
  • 9 eggs, large, separated egg yolks from egg whites
  • 2 cups sugar
  • icing sugar, for decoration

  • Preheat the oven to 350 F or 180°C. Grease a 23 cm springform pan.
  • Melt the chocolate and butter in a double boiler and let them melt. Be careful not to burn them and stir occasionally.
  • Meanwhile, beat the egg yolks with the sugar using a mixer until they turn a pale yellow color. Add a bit of the melted chocolate and butter mixture and stir. Then add the rest of the chocolate mixture and stir.
  • Beat the egg whites in a mixer until stiff peaks form, and gently fold into the chocolate mixture.
  • Pour the mixture into the greased pan and bake until the cake is cooked and starts to crack on top. About 20-25 minutes.
  • Let it cool on a rack for 10 minutes and remove from the pan.
  • Dust with powdered sugar.
