French Apple Tart

This delicious apple tart includes apple puree and an apricot jam glaze.

  • 1 1/2 cups flour
  • 115 grams unsalted butter , in small pieces, fry
  • 2 tablespoons vegetable shortening
  • 1/4 teaspoons salt
  • 0.25 cups water, frozen
  • 2 green apples , peeled and sliced very thin (let soak in lemon juice)
  • 1 cup apple puree
  • 2 teaspoons powdered sugar
  • 1/4 cups apricot jam, heated for 30 seconds in the microwave

  • In a bowl, mix the flour, butter, shortening, and salt. Use your fingers to mix everything well.
  • Add 1/4 cup of ice water and stir a little more to incorporate, adding more water if necessary until a smooth dough forms.
  • With the palm of your hand, press the dough onto a floured surface, stretching the dough slightly to soften it. Form a ball and wrap it in plastic wrap. Refrigerate for 30 minutes.
  • Preheat the oven to 200 degrees.
  • Grease a 25 cm tart pan and fit the dough to cover the edges of the pan. Trim any excess dough. Use a fork to poke holes in the dough and refrigerate for another 30 minutes.
  • Place the apple puree on top of the tart dough.
  • Dry the apples and arrange them on top of the apple puree, placing all the slices facing the same way to form a circle. Sprinkle with powdered sugar.
  • Bake the tart on the bottom rack of the oven for 45 minutes or until the apples begin to brown slightly.
  • Brush the apples with apricot jam and let the tart cool on a rack.
