150 grams unsalted butter
20 centiliters fresh cream
100 grams powdered sugar

Melt the chocolate in a double boiler with a tablespoon of water.
Mix the egg yolks with the butter, crème fraîche, and powdered sugar until you have a homogeneous paste.
Whip the egg whites until stiff peaks form.
Gently fold the egg whites into the mixture and chocolate, always stirring in the same direction.
Place in cups and refrigerate for an hour.
