French Macarons

Macarons are a French dessert that has become very popular worldwide; this delicious dessert made from egg whites and almond flour is something you must try.

  • 6 egg whites
  • 1 pinch salt
  • 400 grams icing sugar
  • 250 grams almond flour
  • 2 drops gel food coloring, in your favorite color

  • 1 tablespoon lemon zest
  • 1 tablespoon pistachios, ground
  • 1 tablespoon cocoa powder

  • Place the egg whites in a metal bowl and add a pinch of salt. Beat with an electric mixer until stiff peaks form. Add 1 tablespoon of powdered sugar and continue beating. Sift half of the remaining powdered sugar over the egg whites; beat on high speed until they look shiny. Sift the rest of the sugar and beat again until combined.
  • Fold in the ground almonds with a spatula.
  • Divide the mixture into four different bowls. Incorporate 1 or 2 drops of food coloring in each bowl to have different colored batters.
  • Line a baking sheet with parchment paper. Fill a piping bag with one of the mixtures and form small circles of 2 centimeters in diameter. Repeat the process with the remaining mixtures, ensuring to use a clean piping bag for each one.
  • Preheat the oven to 170°C. Let the macarons rest for 30 minutes while you prepare the filling.
  • Beat the butter until creamy. Add the powdered sugar and continue beating until you have a smooth mixture. Incorporate the vanilla, cream, and beat again until you achieve a light and fluffy consistency.
  • Divide this cream among four different bowls. Incorporate cocoa, lemon zest, pistachios, and strawberry jam into each of the bowls to have four different flavors. Set aside.
  • Bake the macarons in the preheated oven for 14 minutes. Remove from the oven and let them cool on the same baking sheet.
  • Once cooled, spread the flat side of one macaron with the corresponding filling and place another macaron of the same color on top, like a sandwich. Serve immediately or place in an airtight container and refrigerate.
