Fried ice-cream

This fried ice cream recipe has the characteristic of being made at a lower temperature than usual due to the fact that it comes into contact with a very high temperature at the time of frying, but precisely this shock of temperatures helps the texture of the weathered with which wraps are crispy and hot on the outside. This fried ice cream can be served with fruit, syrups, honeys or icing sugar.

  • 4 white breads, large slices, no edge
  • 4 balls vanilla ice cream, deep frozen, medium
  • 2 cups wheat flour, 400 g
  • 1 teaspoon REXAL® baking powder, 7 g
  • 1 tablespoon sugar, 15 g
  • 1 teaspoon salt, 7 g
  • 1 1/2 cups sparkling water, 375 ml (this is an approximate, it will depend on the desired consistency in the coating)
  • vegetable oil, to fry
  • icing sugar, to decorate
  • D'Gari® chocolate syrup, to decorate
  • D´Gari® strawberry flavor syrup
  • strawberries, in quarters, to decorate
  • spearmint, in sheets, to decorate

  • Place the slices of bread on a smooth surface and flatten them with the help of a rolling pin; Once flattened, place a frozen ice cream scoop in the center of the slice and wrap it with the spread bread to cover the entire surface of the ice cream scoop, freeze again for 1 hour or until the loaf is very firm.
  • For the batter, in a bowl mix the wheat flour with the Rexal® Baking Powder, the sugar and the salt; Pour in the mineral water little by little and continue mixing until you get a semi-thick consistency (as shown in the video). Reserve until use.
  • In a deep pot, heat plenty of oil over medium heat.
  • Cover the ice cream ball with the mixture and immediately fry in the oil until it forms a golden crust (for approximately 2 minutes), repeat the operation with the rest of the ice cream balls. We recommend that you do this quickly once you remove the ball from the freezer.
  • On the fried ice cream ball, sprinkle icing sugar and pour D'Gari® chocolate syrup and D'Gari® strawberry syrup, decorate with strawberries and mint leaves.
