Fried milk is a flour confectionery baked with milk and fried sugar. It is taken for dessert, sprinkled with icing sugar and cinnamon. It is a typical recipe of the region of Castilla y León in Spain.

600 grams cow's milk
1 sprig cinnamon
1 strip lime peels
2 eggs, big
1 egg yolk
100 grams icing sugar
50 grams flour
35 grams corn masa flour
1 teaspoon vanilla essence
vegetable oil

Line the baking sheet with aluminum foil and lightly grease it with oil
Put a pot with milk, cinnamon and lemon peel.
Bring it to a boil, remove it from the heat and set it aside.
Put in a bowl the eggs, yolk, sugar, corn flour, vanilla essence, and whisk until you get a homogeneous mixture.
Replace the milk mixture in the fire and bring it to a boil.
Pour the milk over the eggs and mix well.
Bring it to a boil and then let it simmer for 3 minutes or until the cream thickens.
Put the cream in the prepared baking sheet and smooth the surface with a dampened spatula.
Allow to cool completely, cover and refrigerate for at least 2-3 hours.
Turn the cream over and remove the foil.
Cut it diagonally to obtain triangles (about 25) or in squares if you prefer.
Sprinkle the triangles with the flour and shake them to remove the excess.
Heat oil in large skillet over high heat.
Fry the triangles in batches for 45 seconds.
Turn them over with a shovel with holes and continue to fry them until they are well browned.
Let them drain on kitchen paper and serve them sprinkled with sugar and cinnamon.
