Fried milk is a sweet dish made from cooked flour with milk and sugar, fried. It is served as a dessert, dusted with powdered sugar and cinnamon. It is a typical recipe from the region of Castilla y León in Spain.

600 grams cow's milk
1 sprig cinnamon
1 strip lime peels
2 eggs , large
1 egg yolk
100 grams powdered sugar
50 grams flour
35 grams corn flour
1 teaspoon vanilla essence

Line the baking tray with aluminum foil and lightly grease it with oil.
Put a pot with milk, cinnamon, and lemon peel.
Bring it to a boil, remove it from the heat, and set it aside.
In a bowl, place the eggs, yolk, sugar, cornstarch, vanilla essence, and whisk until achieving a homogeneous mixture.
Put the milk mixture back on the heat and bring it to a boil.
Pour the milk over the eggs and mix it well.
Bring it to a boil and then let it simmer for 3 minutes or until the cream thickens.
Pour the cream into the prepared baking tray and smooth the surface with a damp spatula.
Allow it to cool completely, cover it, and refrigerate for at least 2-3 hours.
Turn the cream over and remove the aluminum foil.
Cut it diagonally to obtain triangles (about 25) or into squares if you prefer.
Dust the triangles with flour and shake them to remove the excess.
Heat plenty of oil in a pan over high heat.
Fry the triangles in batches for 45 seconds.
Turn them over with a slotted spatula and continue frying until golden brown.
Let them drain on paper towels and serve them dusted with sugar and cinnamon.
