Fried Rice Pudding Balls

  • 1 cup rice
  • 2 cups water
  • 1 stick cinnamon
  • 1 teaspoon lime juice
  • 2 cups Santa Clara® whole milk
  • 1/2 cups condensed milk
  • 1/3 cups corn masa flour
  • 1/2 cups flour
  • 1/2 cups Santa Clara® whole milk
  • 1 teaspoon cinnamon
  • 2 cups vegetable oil, for frying

  • Cook the rice over medium heat in a large saucepan with the water and the cinnamon stick for about 20 minutes.
  • Add the zest, Santa Clara® whole milk, and condensed milk, and let cook until the liquids reduce and thicken. Chill very well.
  • With your hands, form rice balls and refrigerate for 20 minutes.
  • In a bowl, mix the corn flour, flour, Santa Clara® whole milk, cinnamon, and mix until combined.
  • Dip the rice balls in the previous preparation and fry in hot oil. Drain on paper towels.
  • Serve immediately, accompanied by more cinnamon.
