Frozen Cheesecake with Jam

  • 1 package María cookies
  • 90 grams butter, melted
  • 250 grams cream cheese
  • 3/4 cups sugar
  • 1 cup table cream
  • 1 cup cow's milk
  • 100 grams whipped cream
  • 1 tablespoon unflavored gelatin powder
  • 1/2 cups water
  • 100 grams blackberries, or strawberries
  • 1/2 cups sugar
  • 1/2 cups water

  • Crush the cookies until finely ground, melt the butter and mix it with the cookies until it forms a damp sand-like texture or dough. Place it in a springform pan or a baking dish lined with aluminum foil to make it easy to remove without sticking. Refrigerate while preparing the filling.
  • Hydrate the gelatin with 1/2 cup of water.
  • In a bowl, place the cream cheese and beat it a little, then add the sugar and cream it well. Next, add the half and half and continue beating until well incorporated, then add the milk and mix a bit more, and finally, fold in the whipped cream gently.
  • Then, in a double boiler or microwave, we heat the hydrated gelatin for about 10-20 seconds. Once slightly warm, we add it to the cheese mixture, mixing very well until everything is incorporated.
  • Pour into the mold with the cookie crust and place it in the freezer until the next day.
  • In a saucepan over low heat, place the blackberries or strawberries with the water and sugar, mixing and checking constantly until it thickens a bit. If necessary, add a little more sugar.
  • Remove the cheesecake from the freezer about 30 minutes before serving, and spread the jam on top or on the slice you are going to serve.
