Frozen Lemon Tartlets

Delicious recipe to prepare a frozen lemon tartlet with zero-calorie sweetener, so diabetics can enjoy it too. This is delicious! It's very tasty, make it!

  • 8 María cookies
  • 1 package wholegrain crackers, low in sugar
  • 100 grams almonds
  • 1/2 glasses low-fat milk
  • 2 envelopes unflavored gelatin powder
  • 2 glasses low-fat milk
  • 1/2 glasses low-fat sour cream
  • 15 envelopes zero-calorie sweetener, (diabesugar)
  • 4 limes, , juice
  • 2 limes, , zest

  • Crush all the cookies until you obtain a coarse powder (you can do this using a blender).
  • Mix them with the almonds and pour into 4 tartlet molds or one medium pie mold. Incorporate 1/2 glass of milk and stir until you get a semi-solid mixture. Press against the bottom of the mold.
  • Bake at 220 °C for 5 minutes to slightly dehydrate and give a golden color.
  • Soak the gelatin in a glass of milk. Let it rest and then heat in the microwave for 30 seconds to dissolve.
  • In a bowl, mix the cream, the rest of the milk, the sweetener, the lemon juice, and the zest.
  • Add the hot gelatin and mix well. Pour over the already baked tart shells and refrigerate until set.
