This delicious cake with dried fruits, candied, and spices is a treat for the December holidays. It is very important to buy good quality fruit for it to be delicious.
Preheat the oven to 120 degrees Celsius and position the rack in the center of the oven.
Prepare two loaf pans by greasing them with vegetable spray and a little flour.
Bring orange juice to a boil in a small pot over medium heat, add the candied orange and other fruits, mix, and remove from heat. Let it absorb the juice for 10 minutes.
Remove the fruits from the juice and coat them with a little flour.
In another deep bowl, mix 1/2 cup of flour, whole wheat flour, cinnamon, ginger, baking powder, and salt.
In another deep bowl, beat the sugar, oil, and butter with an electric mixer for 2-3 minutes. Add the piloncillo, vanilla, and egg whites, and beat for another 2-3 minutes.
Add the dry ingredients to the wet mixture, mix with a wooden spoon, and add the fruits. Pour the batter into the two prepared loaf pans, and decorate with walnuts.
Bake the loaves for 1 hour and 40 minutes or until a toothpick inserted comes out clean. Remove from the oven.
Allow the loaves to cool and remove from the pans.
