Fruit and Spice Cake

This delicious cake with dried fruits, candied, and spices is a treat for the December holidays. It is very important to buy good quality fruit for it to be delicious.

  • 1 1/2 cups orange juice
  • 1 1/2 cups caramelized orange peel
  • 1 cup dried cherry, chopped
  • 1 cup dried peaches, chopped
  • 1 cup pineapple, chopped dried
  • 3/4 cups raisins
  • 1 cup flour
  • 3/4 cups whole-wheat flour
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoons ginger powder
  • 1/2 teaspoons clove powder
  • 1/2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1/2 cups sugar
  • 1/4 cups vegetable oil
  • 2 tablespoons butter, at room temperature
  • 3 tablespoons piloncillo, granulated
  • 1 teaspoon vanilla essence
  • 2 eggs
  • walnuts, for decoration

  • Preheat the oven to 120 degrees Celsius and position the rack in the center of the oven.
  • Prepare two loaf pans by greasing them with vegetable spray and a little flour.
  • Bring orange juice to a boil in a small pot over medium heat, add the candied orange and other fruits, mix, and remove from heat. Let it absorb the juice for 10 minutes.
  • Remove the fruits from the juice and coat them with a little flour.
  • In another deep bowl, mix 1/2 cup of flour, whole wheat flour, cinnamon, ginger, baking powder, and salt.
  • In another deep bowl, beat the sugar, oil, and butter with an electric mixer for 2-3 minutes. Add the piloncillo, vanilla, and egg whites, and beat for another 2-3 minutes.
  • Add the dry ingredients to the wet mixture, mix with a wooden spoon, and add the fruits. Pour the batter into the two prepared loaf pans, and decorate with walnuts.
  • Bake the loaves for 1 hour and 40 minutes or until a toothpick inserted comes out clean. Remove from the oven.
  • Allow the loaves to cool and remove from the pans.
