Fruit Cake with Chocolate and Marzipan

A delicious cake made with spices, dried fruits, and chocolate topped with marzipan.

  • 200 grams unsalted butter
  • 200 grams brown sugar
  • 100 grams bittersweet chocolate, in pieces
  • 75 milliliters brandy
  • 1 tablespoon vanilla essence
  • 250 grams raisins
  • 100 grams cranberries
  • 100 grams lemon zest
  • 200 grams flour
  • 100 grams almonds
  • 3 tablespoons cocoa powder
  • 3 eggs , beaten
  • 2 tablespoons cinnamon powder
  • 500 grams mazapán
  • powdered sugar

  • In a large pot, place the butter, sugar, chocolate, brandy, vanilla, dried fruits, and zest. Heat over medium heat until everything has melted. Remove from heat.
  • Preheat the oven to 150 degrees Celsius.
  • Prepare a rectangular loaf pan or a round mold with cooking spray.
  • In a deep bowl, mix the flour, almond, spices (cinnamon and ginger), and cocoa. Add the eggs and gradually incorporate the mixture heated in the pot. Mix well.
  • Pour the mixture into the mold and bake for 1 1/2 hours or until a toothpick inserted comes out clean. Remove from the oven.
  • Allow the cake to cool and unmold.
  • With a rolling pin, flatten the marzipan on a floured surface until it covers the cake and place it on top of the cake.
