Apple Roll with Cheese

  • 1 cup walnuts, finely chopped for the filling
  • 1 teaspoon cinnamon powder, for the filling

  • 1 tablespoon vanilla essence, for the filling
  • 1/2 cups icing sugar, for the filling
  • 6 egg whites, for the cake

  • 1/4 cups sugar, for the cake
  • 1 cup flour, for the cake
  • 1/4 cups butter, melted for the cake

  • For the filling, peel the Gala Washington® apple and cut into cubes. Set aside.
  • In a medium skillet, heat the butter, add the walnuts, apples, cinnamon, nutmeg, and brown sugar. Cook for 5 minutes, then let cool and set aside.
  • For the cake, beat the egg whites with the sugar until stiff peaks form. Set aside.
  • Beat the egg yolks with the sugar until they change color and increase in volume. Set aside.
  • In a bowl, gently fold the egg whites into the yolks and, using a strainer, gradually add the flour, alternating with the melted butter and cinnamon. Mix until you have a homogeneous mixture.
  • Pour onto a baking sheet lined with parchment paper and bake for 10 minutes at 180 °C.
  • Place the cake on a cloth with powdered sugar and roll the cake right out of the oven. Let cool and set aside.
  • Mix the cream cheese with vanilla extract and powdered sugar until fully combined and creamy in consistency.
  • Unroll the cake, fill it with cream cheese, then with the cinnamon apples, and roll it up. Refrigerate for 30 minutes.
  • Decorate with whipped cream and apples.
