Banana Tower with Passion Fruit

Prepare this delicious dessert in the shape of a tower; made up of a rich combination of banana puree, vanilla, cinnamon, cardamom, and brown sugar. Mixed with crispy layers of puff pastry and whipped cream. The best part is that it is drenched in passion fruit pulp, making it unique. Don’t forget to try it.

  • 1 tablespoon cardamom
  • 6 tabasco banana
  • 150 grams brown sugar
  • 2 limes
  • 250 grams puff pastry
  • 1 tablespoon cinnamon powder
  • 1 stick cinnamon
  • 2 tablespoons vanilla essence
  • 1 cup whipping cream
  • 1 cup passion fruit pulp, or mango
  • 2 1/2 cups cow's milk
  • 1/2 cups butter
  • 1/2 cups granulated sugar

  • Preheat the oven to 180°C for 15 minutes.
  • In a pot, boil the milk, vanilla, cinnamon stick, cardamom, and 5 peeled bananas for 3 minutes. After 3 minutes, remove only 2 bananas and leave the others for an additional 8 minutes; remove and set aside.
  • The bananas you set aside, place them on a baking tray, brush them with melted butter, and sprinkle with refined sugar, a touch of ground cinnamon, and bake until well browned; remove and set aside.
  • In the food processor, add the bananas with a little of the cooking milk to make a puree. The texture should be thick and creamy.
  • Refrigerate until very cold.
  • With the help of a cutter, make thin, round slices with the puff pastry. Fry in hot oil. Set aside.
  • Whip the cream.
  • For assembly: Form a tower in the following way, starting from the bottom up; Banana puree, puff pastry layer, banana puree, whipped cream, puff pastry layer, banana puree, whipped cream, puff pastry layer, banana puree, and flambéed bananas. Drizzle with passion fruit pulp and decorate to taste.
