In a pot, mix the sugar, ginger, and 2 1/2 cups of water.
Cook over medium heat until the sugar is 100% dissolved, 5-7 minutes. Remove from heat and strain.
Blend the sugar syrup, blackberries, lemon juice, and a pinch of salt in a blender.
Place in a metal rectangular dish and freeze for 4 hours, every half hour remove from the freezer, scrape with a spoon, and return to the freezer to achieve the granita.
