For the chocolate covered apples, pour water into a pot and heat on high until it boils. Turn off the heat.
Immerse the apples for 30 seconds to remove the wax. Remove the apples and dry them thoroughly.
Place the dark chocolate, previously chopped, in a glass container. Heat it in the microwave in 15-second intervals and mix thoroughly. Allow it to cool.
Insert a wooden stick into each apple, at the top. Coat them with the chocolate at room temperature while rotating. Let excess chocolate drain off and place them on a silicone mat or wax paper to allow the chocolate to harden.
Melt the colored chocolate in the microwave using the same technique and mix thoroughly.
Pour the chocolate onto the table or a marble surface, and spread it with your spatula to create a very thin layer of the sweet. Let it cool.
Use a scraper to lift the chocolate to form shavings.
Using a brush, apply a little water on your apples and cover with red chocolate shavings.
