Fruit Minestrone

It is a variant of the minestrone soup from Italy; this soup from Italy is made with vegetables and even meats, the difference is that this one is made with fruits, giving a fresher touch for any season of the year as well as unique flavors and aromas.

  • 3 pods liquid vanilla
  • 300 grams sugar
  • 1 tablespoon orange juice
  • 1 tablespoon lemon juice
  • 1 banana
  • 30 grams basil
  • 2 green apples
  • 2 kiwis
  • 2 peaches
  • 4 strawberries

  • Boil the water together with the sugar and the vanilla pods; when a syrup with a slightly thick consistency has formed, remove from heat and add the orange and lemon juice.
  • Pour the syrup into the blender and add the banana sliced into rounds and the previously washed and disinfected basil leaves. Blend until all ingredients are incorporated.
  • Peel and cut the rest of the fruit into small cubes and mix them in a bowl. Add the banana syrup mixture to the fruit and let it sit in the refrigerator, covered, for about two hours. This will allow the fruits to soak up the flavor of the syrup.
  • Once this time has passed, serve a scoop of yogurt ice cream, pour the fruit minestrone on top, and place more ice cream above. Decorate with fruit or a mint leaf.
