Fruit Skewers with Amaranth and Honey

For a healthy snack, prepare this recipe for fruit skewers with amaranth and honey. You can also make it as a dessert or appetizer for a formal breakfast.

1 tablespoon extra virgin olive oil
1/4 melons
4 raspberries
4 strawberries
4 green seedless grapes
4 mandarin orange wedges, in fillet (skinless)
1/4 cups honey
1/2 cups amaranth
8 leaves spearmint, finely chopped

Rub a little oil on 4 skewers so the fruit slides off easily.
Make balls with the melon using a melon baller.
On each skewer, arrange the fruit, preferably in the same order for a beautiful presentation: raspberry, strawberry, melon, grape, and mandarin.
Drizzle the skewers with honey, to taste, but not too much.
Sprinkle with amaranth and mint.
