Fruit Skewers with Amaranth and Honey

For a healthy snack, prepare this recipe for fruit skewers with amaranth and honey. You can also make it as a dessert or appetizer for a formal breakfast.

  • 1 tablespoon extra virgin olive oil
  • 1/4 melons
  • 4 raspberries
  • 4 strawberries
  • 4 green seedless grapes
  • 4 mandarin orange wedges, in fillet (skinless)
  • 1/4 cups honey
  • 1/2 cups amaranth
  • 8 leaves spearmint, finely chopped

  • Rub a little oil on 4 skewers so the fruit slides off easily.
  • Make balls with the melon using a melon baller.
  • On each skewer, arrange the fruit, preferably in the same order for a beautiful presentation: raspberry, strawberry, melon, grape, and mandarin.
  • Drizzle the skewers with honey, to taste, but not too much.
  • Sprinkle with amaranth and mint.
