Guava Ate

Ate is a typical Mexican dessert that you can enjoy as a dessert or a sweet snack; in this case, it is made with guava, but it can also be made with other fruits and paired with cheese.

  • 1 kilo guava , ripe, but firm
  • 2 apples, the peels and cores
  • 3 cups sugar
  • 4 lemons, the juice

  • Boil the guavas in 1 liter of water for about 3 to 5 minutes until the skin starts to burst.
  • Separately, boil the peels and cores of the apples in 1 cup of water for 20 minutes over low heat. What we want is to obtain pectin.
  • In another pot, boil 1 liter of water with sugar until you achieve a syrup consistency, remove from heat, and add the previously strained apple water.
  • In another pot, pour in the guavas over low heat. Add the syrup you made and the lemon juice. Stir until the bottom of the pot is visible (approximately 45 minutes).
  • Remove from heat, cover a rectangular aluminum mold with parchment paper. Pour the mixture and let it rest for 24 hours.
