No-Bake Strawberry Cheesecake

This delicious dessert is perfect for a hot afternoon with your family and will also save you in a pinch. It's super creamy and has pieces of fresh strawberries, a very crunchy vanilla crust, and the delightful flavor of cream cheese that you will love.

  • 2 packages María cookies, (170 g each)
  • 1/2 cups butter, melted (90 g)
  • 2 tablespoons raw sugar
  • 2 1/2 cups strawberries, halved, divided
  • 2 tablespoons lime juice
  • 2 packages cream cheese, (190 g each) softened
  • 1/4 cups sugar
  • 3 envelopes unflavored gelatin powder, (7 g each) hydrated
  • 2 cups whipping cream
  • 5 strawberries, slices, for decoration
  • chantilly cream, for decoration

  • Crush the cookies in a food processor until you get a fine powder. Mix with the butter and sugar.
  • Pour the cookie mixture into an 18 cm cake pan and spread it with a spoon to form a crust. Refrigerate for 15 minutes.
  • Blend 1 ½ cups of strawberries with lemon juice, cheese, and sugar for 3 minutes or until you obtain a smooth mixture. Add the hydrated and melted gelatin in a thin stream. Set aside.
  • Whip the cream until soft peaks form and gently fold it into the cheese mixture.
  • Arrange the remaining strawberry halves around the pan. Pour the strawberry mixture and refrigerate for 1 hour or until set.
  • Decorate with strawberry slices and whipped cream.
