Peach Yoghurt Cupcakes and Jelly

Peach and yoghurt cupcakes are soft, fluffy, and very pleasant.

  • 300 grams unsalted margarine
  • 300 grams sugar , white
  • 5 eggs
  • 1/2 kilos flour , prepared
  • 1 teaspoon baking powder
  • 1 1/2 cups yogurt, peach
  • 5 peaches, in syrup
  • peach jam, or jelly

  • Cream the margarine well until white. It is preferable to do this step with a mixer, either stand or hand-held.
  • Incorporate the sugar and continue beating for about 3 minutes, until it integrates with the margarine.
  • Add the eggs one at a time, beating for about 3 minutes between each addition.
  • Add the peach yoghurt and continue beating.
  • Then incorporate the flour, which has been sifted or sieved with the baking powder. This step can be done with a rubber spatula or a metal whisk (balloon).
  • Chop three peaches (reserve the rest) into small pieces and incorporate them into the mixture (the liquid should be drained beforehand).
  • Mix and let the batter rest for a while. Then pour it into the liners we have previously placed in the molds, only filling them up to three-quarters full.
