Red wine pears are a classic choice when selecting a good dessert to finish the Christmas dinner. I like it and love it, it's delicious and turns out fabulous for me.
Place the wine, vanilla bean, a cinnamon stick, cloves, and sugar in a stainless steel saucepan. Simmer for a few minutes. Peel the pears without removing the stems. Arrange them upright in the wine. Cook for 20 minutes or until tender but not soft. Check the doneness by inserting a toothpick.
Let cool in the wine, remove, and place on a platter or dessert plates. Reduce the cooking liquid until it reaches a thick syrup consistency. Let cool and pour over the pears. Serve the pears warm or at room temperature.
