Prepare the sablé dough: pour the butter, sugar, egg, and salt into the food processor. Beat lightly, add the flour all at once, and mix for a few more seconds. (It can also be prepared by hand).
Pour the dough onto a cold surface, preferably marble, and knead with the palms of your hands until it becomes homogeneous. This operation should be done quickly, so the dough does not heat up. Place it in the refrigerator and chill for 30 minutes.
Meanwhile, prepare the almond cream: pour all the ingredients into the mixer or food processor, and blend until it becomes a creamy and homogeneous paste. Cover it and place it in the refrigerator to chill for 30 minutes.
Then, roll out the sablé dough with a rolling pin until it is 3 millimeters thick, and line a round removable mold with it. Place the mold in the refrigerator and chill for 30 minutes.
Next, remove from the refrigerator, prick the bottom of the dough with a fork, cover it with parchment paper, fill the tart shell with raw legumes to prevent the dough from rising, and place in the oven, previously preheated to medium temperature, for 15 to 20 minutes. Remove the legumes and paper and bake for another 15 minutes.
Remove the basket from the oven, fill it with two-thirds of the almond cream, and bake for another 10 minutes. Finally, remove it from the oven, let it cool slightly, and unmold. Fill it with the remaining almond cream and top it with the strawberries.
Finally, heat the jam together with the water in a small saucepan. Strain it and glaze the fruits with the jam.
