Prepare a dough with the flour, water, egg yolk, butter, and salt. Roll it out until it is 3 to 4 mm thick and cut 6 circles to fit into 6 tartlet molds.
Line the molds with the dough, prick it several times so it doesn't rise while baking, and cook in the oven, preheated to 180 degrees C, for 15 minutes.
Let cool, remove the tartlets from the molds and put a bit of jelly on each one, previously dissolved in a little water.
Fill the tartlets with the strawberries, drizzle with the remaining jelly, and serve.
