Stuffed Apples with Blue Cheese

This new version of the classic baked apples is somewhere between sweet and savory. The strong blue cheese is the main ingredient in this recipe; the aromatic spices and sweet honey play supporting roles.

  • 4 red apples, small
  • 60 milliliters honey
  • 1/2 limes
  • 250 milliliters apple juice
  • 2 tablespoons rum
  • 8 cloves
  • 2 star anise pods
  • 2 cinnamon sticks
  • 85 grams blue cheese
  • 1 teaspoon ground black pepper
  • 60 milliliters whipping cream, sweet

  • Cut a 5 cm thick cone from the stem side. Remove the cores without going all the way down. Cut around the lower third to prevent them from opening during pressure cooking.
  • Place the apples in an Express Pressure Cooker®. Drizzle with 1/4 cup of honey and the juice of 1/2 lemon. Pour in the apple juice and the rum. Add the clove, star anise, and cinnamon sticks.
  • Close the Express Pressure Cooker® and attach the pressure regulator, place it on the stove over high heat for 25 minutes approximately or until a constant steam comes out, lower the heat to medium and cook for 5 minutes, depending on the size of the apples.
  • Remove the Express Pressure Cooker® from the heat, let it cool, remove the pressure regulator, open the Express Pressure Cooker® and you're done!
  • The apples should feel soft when poked with a fork. Crumble the cheese and measure 1/2 cup; set aside the remaining cheese for garnish.
  • In a small bowl, mash the blue cheese, one tablespoon of honey, the pepper, and the cream. Fill the apples with this mixture.
  • Garnish the apples with the blue cheese you reserved and a little pepper. Drizzle with some of the juices and serve.
