This new version of the classic baked apples is somewhere between sweet and savory. The strong blue cheese is the main ingredient in this recipe; the aromatic spices and sweet honey play supporting roles.
Cut a 5 cm thick cone from the
stem side. Remove the cores without
going all the way down. Cut around the
lower third to prevent them from opening
during pressure cooking.
Place the apples in an Express Pressure Cooker®. Drizzle with 1/4 cup of honey
and the juice of 1/2 lemon. Pour
in the apple juice and the rum.
Add the clove, star anise, and cinnamon sticks.
Close the Express Pressure Cooker® and
attach the pressure regulator, place it
on the stove over high heat for 25
minutes approximately or until
a constant steam comes out, lower the
heat to medium and cook for 5 minutes,
depending on the size of the apples.
Remove the Express Pressure Cooker® from the heat,
let it cool, remove the pressure regulator,
open the Express Pressure Cooker® and you're done!
The apples should feel soft when poked with a fork.
Crumble the cheese and measure 1/2 cup;
set aside the remaining cheese for garnish.
In a small bowl, mash the
blue cheese, one tablespoon of honey,
the pepper, and the cream. Fill
the apples with this mixture.
Garnish the apples with the blue cheese
you reserved and a little pepper.
Drizzle with some of the juices and serve.
