7 egg whites
7 egg yolks
170 grams granulated sugar
220 grams wheat flour
20 grams cornstarch
40 grams vegetable oil
4 grams vanilla essence

Preheat the oven to 190 °C.
In a bowl, sift the flour and cornstarch.
Whip the egg whites until they double in volume and gain consistency, gradually adding the sugar while continuing to whip.
Once all the sugar is incorporated, add the egg yolks and oil.
Once the mixture is homogeneous, using a silicone spatula, fold in the flour in three parts with gentle movements to avoid losing air.
Pour into a previously greased 19 cm diameter mold.
Bake in the preheated oven for 30 to 40 minutes.
