Genoese Cake

An easy recipe to obtain a fluffy and soft cake, practical for various dessert preparations.

  • 7 egg whites
  • 7 egg yolks
  • 170 grams granulated sugar
  • 220 grams wheat flour
  • 20 grams cornstarch
  • 40 grams vegetable oil
  • 4 grams vanilla essence

  • Preheat the oven to 190 °C.
  • In a bowl, sift the flour and cornstarch.
  • Whip the egg whites until they double in volume and gain consistency, gradually adding the sugar while continuing to whip.
  • Once all the sugar is incorporated, add the egg yolks and oil.
  • Once the mixture is homogeneous, using a silicone spatula, fold in the flour in three parts with gentle movements to avoid losing air.
  • Pour into a previously greased 19 cm diameter mold.
  • Bake in the preheated oven for 30 to 40 minutes.
