Gingerbread Cookie Tree

  • 1 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 3 cups flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoons clove
  • 1/4 teaspoons nutmeg
  • 1 teaspoon ginger
  • 3 tablespoons meringue powder, for the icing
  • 4 cups icing sugar, for the icing
  • 5 tablespoons water, warm, for the icing

  • Preheat the oven to 160°C.
  • In a deep bowl, beat the butter and sugar with an electric mixer.
  • Add the egg and vanilla. Sift the flour along with the spices.
  • Add the mixture 1 cup at a time, mixing well after each addition. The dough will be very stiff.
  • Add the last of the flour by hand. Roll out the dough. Cut the cookies using the cookie cutters.
  • Bake for 10-12 minutes or until done. After baking, place the cookies on a rack and cool completely.
  • For the icing: Make sure all utensils are grease-free. Beat all ingredients for 7 to 10 minutes. When finished, cover with a damp cloth to prevent drying.
