Gorditas from the Villa

This delicious recipe is typical in Mexico City. They are called gorditas de la villa because their origin comes from the surroundings of the Villa de Guadalupe. They are also known as gorditas de atrio, as they are very popular nowadays at the exits of churches, adorned with colored tissue paper. The Gorditas are made with masa for tamales and a hint of sugar. They are cooked on the griddle, giving them a slightly burnt flavor that makes them delicious.

  • 2 cups masa mix for tamales
  • 3/4 cups sugar
  • 1 teaspoon baking soda
  • 2 eggs
  • 1 1/2 tablespoons vanilla essence
  • 1/4 cups water
  • 2 tablespoons vegetable shortening

  • On a clean surface, form a mound with the masa for tamales, sugar, baking powder, and baking soda.
  • Add the eggs, vanilla extract, and water; knead until a homogeneous mixture is obtained, then add the lard and knead only until integrated.
  • Form small balls of dough and flatten them with your hands.
  • Cook on a griddle over medium heat for 5 minutes until they puff up slightly. Let cool.
  • Wrap in colored tissue paper and serve.
