  • In a large pot, mix the wine, water, sugar, and cinnamon over medium-high heat until it boils.
  • Stir well until the sugar dissolves.
  • Peel the pears, leaving the little stem. Brush them with lemon juice (to prevent them from turning brown).
  • When the liquid in the pot is boiling, add the pears and simmer until soft, about 30 minutes.
  • When the pears are ready, transfer them to a serving platter and set aside.
  • Bring the liquid back to a boil and cook until reduced, about 20 minutes. It should have the consistency of honey.
  • Strain and let cool to room temperature.
  • Cut the pears in half and carefully remove the core and seeds. Leave enough space for the filling.
  • With a kitchen towel, dry the pears well.
  • In a bowl, mix the gorgonzola cheese, cream cheese, honey, salt, and pepper.
  • Divide the mixture in the center of each pear.
  • Place the pears on dessert plates and drizzle with the reduced wine liquid.
  • Garnish with toasted walnuts and serve at room temperature.
