Victoria Cherniag Ruiz
A truly innovative dessert. The combination of the sweetness of the poached pears with gorgonzola cheese, walnut, and reduced white wine is delicious.

In a large pot, mix the wine, water, sugar, and cinnamon over medium-high heat until it boils.
Stir well until the sugar dissolves.
Peel the pears, leaving the little stem. Brush them with lemon juice (to prevent them from turning brown).
When the liquid in the pot is boiling, add the pears and simmer until soft, about 30 minutes.
When the pears are ready, transfer them to a serving platter and set aside.
Bring the liquid back to a boil and cook until reduced, about 20 minutes. It should have the consistency of honey.
Strain and let cool to room temperature.
Cut the pears in half and carefully remove the core and seeds. Leave enough space for the filling.
With a kitchen towel, dry the pears well.
In a bowl, mix the gorgonzola cheese, cream cheese, honey, salt, and pepper.
Divide the mixture in the center of each pear.
Place the pears on dessert plates and drizzle with the reduced wine liquid.
Garnish with toasted walnuts and serve at room temperature.
