Guava and Cheese Empanadas

Do you like guava paste with cheese? Prepare these Guava and Cheese Empanadas, a different version of this Mexican dessert but just as delicious. For this recipe, you can buy the cheese you like the most, aged manchego cheese, cured manchego cheese, or your favorite. These Guava and Cheese Empanadas are sweetened with piloncillo, an ingredient that gives it a different and delicious flavor.   • 2 piloncillos
  • 1/4 cups water
  • 1 stick cinnamon
  • sugar, for rolling out

  • 1/2 cups cream cheese, in cubes

  • Preheat the oven to 200°C.
  • For the guava paste, cook the guavas for 10 minutes in boiling water until they are slightly soft, drain and set aside.
  • With the help of a spoon, remove the seeds from the guavas.
  • Place the piloncillo with ¼ cup of water and cinnamon in a small pot, cook for 10 minutes until you obtain a syrup, add the guavas and cook until it has a thick consistency and slightly falls apart. Let cool and set aside.
  • On a clean surface, sprinkle sugar, roll out the puff pastry to 3 mm thickness with the help of a rolling pin, and if necessary, add a little flour. Cut into circles using a cutter with a diameter of 10 cm.
  • Fill the puff pastry discs with the guava paste and add the cubes of cream cheese, close with the help of a fork, and brush with egg.
  • Bake for 20 minutes. Let cool and serve with a glass of milk.
