Homemade Lemon Snow

For a hot day or a fun weekend, prepare this Homemade Lemon Snow recipe, which you can accompany with chili powder and chamoy. To make homemade snow, remember to use salt, as it retains temperature, helping the ice last longer in a solid state. Additionally, you can make a lemon snow as concentrated as you want, since you can add extra syrup and a bit more lemon juice.

  • 4 cups water
  • 2 cups sugar
  • 2 cups lime juice
  • 1 tablespoon green food coloring
  • 1 envelope unflavored gelatin powder, hydrated and melted (7 g)

  • chamoy, powdered, for serving

  • Heat a small pot over medium heat with the water, add the sugar, and cook until a syrup forms. Remove and cool slightly.
  • In a bowl, mix the syrup with the lemon juice, coloring, and gelatin vigorously until incorporated.
  • Place the bowl inside a container with ice and coarse salt. Stir the container for a while until frost begins to form on the edge. Lower the frost with a spatula and continue stirring until the mixture starts to freeze. Repeat until completely frozen.
  • Once the mixture is more solid, freeze it to finish solidifying. When fully frozen, serve with chili powder and chamoy.
