Wash and disinfect the grapes; if they have seeds, remove them.
Preheat the oven to 190 °C.
Reduce the grapes in a saucepan over low heat; when the reduction is slightly lighter than that of a jam, turn off the heat and let rest at room temperature.
Mix the flour, butter, oil, sugar, and yeast in a bowl and combine until obtaining a smooth dough; let it rest for 10 to 15 minutes.
Divide the dough into 4 parts and roll each out to form equal rectangles.
Place two of the rectangles on a baking sheet and add the grape sauce, walnuts, and a little ground cinnamon, cover with the other rectangles and brush with honey.
Bake for 10 minutes, remove from the oven and let cool.
