In an electric mixer, beat the butter, sugar, and vanilla until you achieve a creamy mixture.
First, add the eggs to the butter mixture, then gradually add the flour mixture, continuing to beat.
Add the chocolate chips and your cookie dough is ready.
Take two baking sheets and use a spoon to place small balls of dough.
Bake the cookies for 9-11 minutes or until they are golden brown.
Let the cookies cool for 30 minutes. In the meantime, place the ice cream in the refrigerator to soften.
In a mixer, whip the ice cream for 5 minutes or until it has a spreadable consistency.
Take one cookie and put 2 tablespoons of ice cream on top. Place another cookie over the ice cream to create a sandwich effect. Press both cookies together and use a knife to clean the sides.
