Ice Cream-Filled Cookies

  • 2 1/4 cups flour
  • 1 tablespoon baking powder
  • 1 tablespoon salt
  • 1 cup butter, (2 bars)
  • 3/4 cups brown sugar
  • 3/4 cups granulated sugar
  • 1 tablespoon vanilla essence
  • 2 eggs
  • 2 cups chocolate chips
  • 1 liter vanilla ice cream

  • Preheat the oven to 220 degrees Celsius.
  • In a deep bowl, combine the flour, baking powder, and salt.
  • In an electric mixer, beat the butter, sugar, and vanilla until you achieve a creamy mixture.
  • First, add the eggs to the butter mixture, then gradually add the flour mixture, continuing to beat.
  • Add the chocolate chips and your cookie dough is ready.
  • Take two baking sheets and use a spoon to place small balls of dough.
  • Bake the cookies for 9-11 minutes or until they are golden brown.
  • Let the cookies cool for 30 minutes. In the meantime, place the ice cream in the refrigerator to soften.
  • In a mixer, whip the ice cream for 5 minutes or until it has a spreadable consistency.
  • Take one cookie and put 2 tablespoons of ice cream on top. Place another cookie over the ice cream to create a sandwich effect. Press both cookies together and use a knife to clean the sides.
  • Place the sandwiches on a plate and freeze for at least 1 hour before serving. Cover each cookie with plastic wrap if not serving immediately.
