This apple pie recipe will become your addiction, as they are soft and juicy on the inside but crispy on the outside. This cinnamon-filled apple pie is perfect for any occasion, in addition to being economical and very delicious. Enjoy them hot!
2 tablespoons lime juice, seedless, for the filling
1/2 cups water, for the filling
4 tablespoons sugar, for the filling
2 teaspoons cornstarch, dissolved in cold water
3 tablespoons cinnamon, ground, for the filling

For the dough, place the flour and butter in a food processor and process for 15 seconds until a sandy consistency is achieved, add the egg, salt, sugar, and cold milk.
Knead with your hands just to combine all the ingredients. If it feels too dry, you can add one more teaspoon of milk. Wrap in cling film and refrigerate for 30 minutes.
On a cutting board, chop the Gala apple into small cubes. Set aside.
For the filling, add the butter, Gala apple, brown sugar, lemon juice, and water to a pan and cook for 5 minutes; add the sugar, cornstarch, and ground cinnamon, cook for 5 more minutes and let cool.
Roll out the dough and cut into two large rectangles, for the base and for the top.
Place the apple filling vertically making two lines along (or across) the base. Brush with egg and cover with the dough, cut in half horizontally to form the pies. Seal with a fork. Freeze for 30 minutes.
Remove from the freezer and make 3 diagonal cuts on the surface of the pies, brush with egg and bake for 25 minutes at 180°C. Let cool slightly, serve, and accompany with milk.
