Italian Biscotti

Italian Biscotti is a hard cookie perfect for pairing with a good coffee with milk. This biscotti recipe contains almonds but many variations can be made.

  • 1 cup sugar
  • 1 stick unsalted butter
  • 3 tablespoons brandy
  • 2 tablespoons almond essence
  • 1 tablespoon vanilla essence
  • 1 cup almonds, in pieces
  • 3 eggs
  • 2 3/4 cups flour
  • 1 1/2 tablespoons baking powder
  • 1/4 tablespoons salt

  • In a large deep bowl, mix the sugar, butter, brandy, essences, almonds, and eggs. Add the flour, baking powder, and salt, and mix with a wooden spoon until the dough is smooth and well combined.
  • Cover the dough with plastic wrap and let it rise for 30 minutes.
  • Preheat the oven to 180 degrees Celsius and place a rack in the middle of the oven.
  • With damp hands, take the dough and shape it into two baguette-shaped loaves. Place the loaves on a baking sheet.
  • Bake the loaves for 30 minutes or until golden brown.
  • Remove the loaves from the oven and let cool for 15 minutes.
  • Using a bread knife, cut the biscotti into strips 2 cm wide (as shown in the photo).
  • Place the biscotti on a baking sheet and bake until golden brown, approximately 20 minutes. Remove from the oven and let cool.
