Italian Biscotti is a hard cookie perfect for pairing with a good coffee with milk. This biscotti recipe contains almonds but many variations can be made.
In a large deep bowl, mix the sugar, butter, brandy, essences, almonds, and eggs. Add the flour, baking powder, and salt, and mix with a wooden spoon until the dough is smooth and well combined.
Cover the dough with plastic wrap and let it rise for 30 minutes.
Preheat the oven to 180 degrees Celsius and place a rack in the middle of the oven.
With damp hands, take the dough and shape it into two baguette-shaped loaves. Place the loaves on a baking sheet.
Bake the loaves for 30 minutes or until golden brown.
Remove the loaves from the oven and let cool for 15 minutes.
Using a bread knife, cut the biscotti into strips 2 cm wide (as shown in the photo).
Place the biscotti on a baking sheet and bake until golden brown, approximately 20 minutes. Remove from the oven and let cool.
