Hydrate the gelatin in cold water.
Dry the fruits well with absorbent paper (the drier they are, the better they adhere to the gelatin); set aside.
Heat a little grape juice, wine, and the rest of the water in a pot, to dissolve the sugar and the already hydrated gelatin. Pour a little into a mold (which should be previously moistened and refrigerated) and let this mixture cool until it starts to thicken, but without setting.
Spread the fruits in the mold in layers, each one of a specific variety, seal the whole with the remaining gelatin not too hot, and refrigerate for two hours, or until it sets completely.
Carefully unmold, you can decorate with fruits to serve.
