Gelatin with Marshmallow Decorated with Meringue

A fun and very original recipe, try this marshmallow gelatin decorated with meringue. It is a 3-layer gelatin with small marshmallows inside. You will love it.

  • 2 cups condensed milk
  • 2 envelopes lime gelatin
  • 2 envelopes cherry gelatin
  • 3 envelopes unflavored gelatin
  • 2 bags mini marshmallows
  • 1/4 cups sugar
  • 1/4 cups corn syrup
  • 3 tablespoons water
  • 1/8 teaspoons cream of tartar
  • 1 pinch salt
  • 2 egg whites
  • rainbow sprinkles

  • Prepare the green and red gelatins in separate containers as instructed on the package.
  • In a small glass measuring cup, measure 1/2 cup of cold water. Stir in 2 packets of unflavored gelatin and stir until dissolved. Pour the condensed milk into a medium bowl. Add 1 cup of boiling water. Pour the dissolved gelatin mixture into the condensed milk mixture, then add another 1/2 cup of boiling water.
  • In a mold, add a handful of marshmallows and pour the green gelatin on top. Put in the refrigerator for 15 minutes or until the gelatin sets but is still sticky.
  • Remove from the refrigerator, add another handful of marshmallows, and pour the red gelatin on top. Put in the refrigerator for 15 minutes or until the gelatin sets but is still sticky.
  • Remove from the refrigerator and pour the white gelatin. Put in the refrigerator until the gelatin is completely set.
  • For the meringue: place the sugar, corn syrup, water, cream of tartar, and salt in a small saucepan. Cook over medium heat, stirring constantly until the mixture begins to boil and the sugar is dissolved. Remove from heat.
  • Beat the egg whites in a bowl until frothy. While beating at medium speed, gradually pour the syrup mixture over the egg whites. Increase to high speed and beat until stiff peaks form.
  • Once the gelatin is ready, unmold and, using a piping bag, put the meringue on top, finally decorating with colored sprinkles.
